Jaja Faszerowane (Stuffed Egg Shells)

  • 2 large eggs (per person)
  • 2 Tablespoons melted Butter
  • 1 Tablespoon chopped chives or shallots
  • salt and pepper - to taste
Cook eggs until hard. Cool for easier handling. With very sharp knife cut eggs in half lengthwise.

Remove egg from shell, being careful not to break the shell, and chop fine. Add melted butter, chives, and season. Mix thoroughly and fill shells. Fry in butter for 10 minutes face down.

You don't peel them. You have to cut through the shell, lengthwise. That is why you need a very sharp knife (serrated blade can work, too). The shells make handy little containers for the paste. Also, I don't fry them. I sprinkle with bread crumbs and broil for a few mintues till the crumbs turn golden.
