Meat And Potato Pancake

(4 servings)    Printable Version
  • 1 and 1/2 cups meat any kind (leftover) cooked passed through meat grinder
  • 4 potatoes -- peeled and grated
  • 1 egg -- beaten
  • seasonings to taste
  • fat or butter
Mix in a bowl the meat, potatoes, egg and seasonings. Melt fat or butter in a large frying pan.

Fill frying pan with the meat mixture. Bake in moderate oven for 30 minutes. This will produce a pancake the full size and shape of the frying pan.

I made bonipere this morning, slightly (maybe) different than the suggestions: I used 3 cups pancake mix, 1 egg, 1 1/2 T oil, 1 c baked beans, 1/2 c coconut, and about 1 1/2 cup rice milk. Very tasty, with just smart balance smeared on them.
