Meat And Potato Pancake

  • 1 and 1/2 cups leftover meat - any kind cooked and passed through meat grinder
  • 4 medium potatoes - peeled and grated
  • 1 large egg - beaten
  • seasonings to taste
  • fat or butter - for frying
In a large mixing bowl, mix together the meat, potatoes, egg and seasonings.

Melt fat or butter in a large frying pan (1 or 2 Tablespoons).

Fill frying pan with the meat mixture. Bake in moderate oven for 30 minutes. This will produce a pancake the full size and shape of the frying pan.


What makes a potato pancake even better? Make it the size of a skillet and add meat, per this recipe.

I made bonipere this morning, slightly (maybe) different than the suggestions: I used 3 cups pancake mix, 1 egg, 1 1/2 T oil, 1 c baked beans, 1/2 c coconut, and about 1 1/2 cup rice milk. Very tasty, with just smart balance smeared on them.
