Crepes a la Neige (Crepes w/ Snow)

(1 serving)    Printable Version
  • 1 cup flour
  • 1 and 1/4 cup milk
  • 1 cup snow - fresh hard packed
  • 1/2 teaspoon salt
  • 1/2 cup oil
Mix all the ingredients together to make a smooth dough. Drop a spoonful of the batter into 1 inch of hot fat. Fry for 2-3 minutes on each side.

Serve with molasses or grated maple sugar.

While I'm thankful for this recipe submission, I look at the ingredients and have to say this recipe is a dud. The liquid to flour ratio is really off. I'm leaving the recipe up for a while in case anyone wants to comment with a more usable recipe. Cooking with snow is a fun idea. Please comment if you know of a proven way to do it right.

Actually, looking it back over, the ingredients are right, but the cook method is off. Lightly grease a small, slope-edged (crepe) pan over medium high heat. Add about 1/4 cup of batter and roll the pan so that it covers the entire bottom. Watch edges for browning, it will take about 90 seconds. Flipping the crepe in air is much easier than using a spatula (this is why we used a sloped edge pan and little oil). The second side cooks much faster, about 30 seconds.

We are snowbound today, so I decided to whip up a batch of snow crepes. I combined the ingredients with a stick blender and they turned out perfect. I see no problems with this recipe.

I remember them as a child... The air in the snow makes a raising agent.

Wow... I looked at this recipe to see what the ingredients might be...and they were serious - they want you to get real snow..? Living in Australia I think that'll be a bit hard so I guess if I ever make these I'll just use ice-cream.
