Jalapeno Breakfast Cups

  • 10 large eggs
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 4 jalapenos with seeds removed - chopped
  • 3/4 cup grated Cheddar cheese
  • 10 slices of bacon - cooked and crumbled
Preheat oven to 400 degrees.

Grease 12 cups of a muffin tin with butter or cooking spray.

In a fairly large mixing bowl, beat the eggs with the milk and seasonings until well combined.

Stir in the jalapeņo, cheese and bacon.

Distribute evenly among the 12 prepared muffin cups - filling each no more than 2/3 full.

Bake at 400 degrees for 14 to 16 minutes until set. You can test by inserting a toothpick into the center of one of the egg cups. If uncooked egg appears on the toothpick, continue cooking.

Enjoy warm or store when cooled. (Keeps well for 1 week refrigerated in an airtight container. To reheat, wrap in paper bowl and microwave for 30 seconds.)
