Whole-Wheat Pancake Mix

(4 servings)    Printable Version
  • 1 one-pint wide-mouth jar
  • 1 and 1/4 cups whole wheat flour
  • 1/3 cup cornmeal
  • 6 Tablespoons powdered buttermilk
  • 1 Tablespoon sugar
  • 2 teaspoons baking soda
  • 3/4 teaspoons salt
In a small bowl, combine all of the white ingredients. Pour into the jar. A rolled piece of paper makes a perfect funnel for this. Pack the layer down with a ladle.

Add the corn meal to the jar and pack it down.

Add the wheat flour and pack it down.

Seal the jar.


To Prepare:

Whole-Wheat Pancakes
(4 servings)
  • 1 jar whole wheat pancake mix
  • 2 large eggs - lightly beaten
  • 1 and 1/2 cups water
  • 1/4 cup canola or vegetable oil
In a large bowl, mix all ingredients together until well combined.

Let the batter set for at least 5 minutes.

Dollop about a 1/4 cup batter per pancake onto a lightly greased griddle or skillet set at medium-high heat. Cook both sides until golden brown.

I replaced the corn meal with oat meal.My family consumed them all right away and was looking for more. Will double recipe.

I made this recipe with and without the cornmeal. The cornmeal left the texture gritty which we didn't prefer. Without the cornmeal, it was great. I didn't alter any of the ingredient amounts to make up for not having cornmeal. The taste and texture was great! Like French toast pancakes. Loved this and am planning on jarring it for gift this Xmas. Thanks!
