Bacon And Cheese Hash Brown Casserole

  • 6 large eggs
  • 1 12-ounce can evaporated milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 30-ounce package of frozen shredded hash brown potatoes - thawed
  • 2 cups shredded Cheddar cheese
  • 1 medium onion - chopped
  • 1 small green pepper - chopped
  • 1 cup crumbled bacon (or diced ham)
Prepare a 13 x 9-inch baking dish by spraying generously with cooking spray.

Preheat oven to 350 degrees.

In a large bowl, beat the eggs with the evaporated milk, salt and pepper. Add all remaining ingredients and mix well. Pour into prepared baking dish.

Bake for 1 hour or until completely set.

Each bite has eggs, potatoes, peppers, onions and bacon. You could also replace the bacon with diced ham or cooked and crumbled bacon. Any cheese will work. We prefer Cheddar.

Quick and easy. I omitted the 1 cup bacon/ham and it turned out great! Everyone in at work loved it!
