Mexican Eggs

  • 4 large eggs
  • 1/2 cup grated Cheddar cheese
  • 1/2 cup green pepper - chopped
  • 1/2 cup onion - chopped
  • 1 boneless skinless chicken breast
  • 1 teaspoon hot pepper sauce
  • 1 Tablespoon olive oil
  • 1/4 cup milk
  • chili flakes - to taste
1) Cook chicken in which way you prefer (oven baked is the healthiest), then set aside.

2) In a large non-stick skillet over medium, heat olive oil and saute the green pepper and onion for 5 minute or until soft.

3) Meanwhile in a medium bowl, beat the eggs with the milk and hot sauce.

4) When the onions and peppers are softened, add the egg mixture to the skillet.

5) Now, add chicken and sprinkle cheese and pepper flakes on top.

6) Cook until egg mixture is firm on the outside but soft in the middle, and the cheese has melted (approximately 7 minutes.)

7) Remove from pan with a non-stick spatula and serve immediately.


Chicken, eggs, cheese, veggies and spice - so nice! Have a great Mexican breakfast!
