Southwest Omelet

  • 4 large eggs - lightly beaten
  • 2 Tablespoons tomato - chopped
  • 2 Tablespoons red or green pepper - chopped
  • 2 Tablespoons onion - chopped
  • 2 Tablespoons ham - diced
  • 2 to 3 teaspoons salsa
  • 1 handful shredded Cheddar cheese
  • sour cream
Mix together the eggs, tomatoes, onion, ham and peppers. Place in a buttered skillet over medium heat - brown lightly and turn.

While browning other side, spread salsa on with spoon; then add most of cheese. Fold over and place remaining cheese on top. Have sour cream on the side for extra flavor.


This easy-to-make omelet has ham, cheese, tomatoes, onion and green pepper. Use your favorite salsa to add more flavor and give you the level of spiciness you prefer.
