Low-Carb Pancakes (Wheat Gluten)

  • 2 eggs
  • 2 and 1/2 Tablespoons wheat gluten
  • 2 Tablespoons heavy whipping cream
  • 1 Tablespoon olive oil
  • 1 Tablespoon water
  • 1/2 teaspoon baking powder
  • 1 teaspoon splenda or 1 packet other sugar substitute
Very easy... just mix together all the ingredients with a whisk - batter might be a bit runny. Cook on a lightly greased skillet as you would any pancake recipe. Drop batter on surface by large spoonfuls. Cook until each side is lightly browned.

Serve with butter and a low-carb store bought syrup. Or for an interesting low-carb topping, mix 1 Tablespoon of sugar-free jam with 1 and 1/2 Tablespoons water and microwave for 45 seconds.

These are wonderful. The texture is right. They are not complicated and they are enjoyed by everyone at my house. I leave out the sweetener and spread the batter thinner when I need something "bread like" to make a sandwich.

These were fabulous! I can't believe how much protein is in them - I input the info into a nutrition calculator and they come out to 27 grams of protein! Woohoo! I spread a little bit of peanut butter and then some Greek yogurt on mine... yummy! Thanks for the awesome recipe!

I can't believe how good this recipe is!! I've been doing low carb for 5 years, and have never had a recipe this good. They resemble french toast a bit more than pancakes, as far as the taste is concerned. Still, they are delicious!
