Sunny-Sunny Corn Muffin

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 4 teaspoons baking powder
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1 cup milk (or 1 10-oz. can creamed corn)
  • 1/4 cup vegetable oil
Mix dry ingredients together. Add egg, vanilla, milk, or creamed corn and egg. Beat just until smooth, approximately 1 minute (please don't be silly and over-mix).

Pour batter into a greased 8-inch square pan or greased muffin tin. Bake at 350 degrees for approx 20-25 minutes. Serve warm with butter or covered with creamed chicken, fish, or meat.


I got this recipe from my mother but she (incorrectly) never thought it was a breakfast dish. She'd serve it with dinner and used to call it corn bread.

I added regular corn and they were very good. I will use less sugar when I make them next time, though.

Is there a recipe for corn muffins that doesn't include regular white flour. I'm trying to stay away from white flour. It would be nice if you had a recipe that would include alternatives to the ingredients listed.

Very, very good I used the corn instead of the milk. How about some nutritional info though, my partner is diabetic. I can figure it I guess (1 med muffin 15 carbs), but it would be nice if you had done it. A great recipie for breakfast or dinner.
