Spinach Quiche

Spinach Quiche

(8 servings)    Printable Version
  • 2 9-inch pastry shells
  • 4 eggs beaten
  • 1 12-ounce can evaporated milk
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • a slight dash of cayenne pepper
  • 1 10-ounce pkg frozen chopped spinach - thawed and drained
  • 1 bunch green onions - sliced into 1/4 inch slices with roots removed
  • 1/2 pound Swiss cheese - grated
  • 1/2 pound Cheddar cheese - grated
In a large mixing bowl, beat eggs with evaporated milk, dry mustard, salt and pepper.

Heat the oven to 350 degrees, with the rack placed in the center.

Add the spinach, green onions and grated cheeses to the egg mixture. Stir until well-blended.

Pour half of the mixture into each prepared crust. Bake at 350 degrees for about one hour, or until center of quiche is firm and quiche is well-browned.

You can add other vegetables to this recipe or just replace the spinach all together with your favorite vegetable. This quiche is good for dinner too. Viva la Mr Breakfast!

I've made this recipe for years and it never fails to delight. I love that this recipe makes two pies and which can be taken as a meal for friend in need. And it freezes well!

I make this every year for Christmas morning... some protein to go with all the sweets. I add extra eggs.

This is my GO-TO recipe for lunch when friends drop in. Easy and fast. Always gets raves. I, too, add bacon bits. This recipe is easily a 5.5!

This recipe deserves a 6 rating. I also add a generous dose of real bacon bits. It adds a great punch to the flavor.

Very good recipe! Used mix of Cheddar, Pepper Jack and Munster cheeses. Skipped the dry mustard because we didn't have any. Worked well with those changes.

This dish was a big hit. We had a holiday party at work today and I brought in 2 spinach quiches. They were gone in 20 minutes and many people had seconds. Happy holidays and Thank U. Mister Breakfast!

I discovered this on youtube. Great recipe. Thinking about trying it with Feta cheese sometime. You should do more recipe videos. I love the quick to-the-point style.

Finally made this and... it was... drum roll... DELICIOUS! I also used only cheddar. I'll make this again for sure. Probably great for Mother's Day or Father's Day. Good job Mister Breakfast!

Delicious with all Cheddar cheese. Also used regular chopped onion instead of green - about a half a cup. Great results.

I love this recipe so easy. You can use egg beaters for a healthier meal. It reheats well in the microwave also.

Hey, Hanna Bo-nanna, maybe try 2% cheese to cut the fat down. I have yet to try this recipe as I just now came across it in my search for an easy quiche. I will be using 2% cheese as that is all I buy.
