Spinach Quiche

Spinach Quiche
(8 servings)    Printable Version

  • 2 9-inch pastry shells
  • 4 eggs beaten
  • 1 12-ounce can evaporated milk
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • a slight dash of cayenne pepper
  • 1 10-ounce pkg frozen chopped spinach -- thawed and drained
  • 1 bunch green onions -- sliced into 1/4 inch slices with roots removed
  • 1/2 pound Swiss cheese -- grated
  • 1/2 pound Cheddar cheese -- grated
In a large mixing bowl, beat eggs with evaporated milk, dry mustard, salt and pepper.

Heat the oven to 350 degrees, with the rack placed in the center.

Add the spinach, green onions and grated cheeses to the egg mixture. Stir until well-blended.

Pour half of the mixture into each prepared crust. Bake at 350 degrees for about one hour, or until center of quiche is firm and quiche is well-browned.


You can add other vegetables to this recipe or just replace the spinach all together with your favorite vegetable. This quiche is good for dinner too. Viva la Mr Breakfast!

Hey, Hanna Bo-nanna, maybe try 2% cheese to cut the fat down. I have yet to try this recipe as I just now came across it in my search for an easy quiche. I will be using 2% cheese as that is all I buy.
