Easy Spinach Dip Quiche

  • 1 cup Spinach dip (leftover from a party)
  • 5 eggs
  • 1 Frozen Pie Crust 1/2 cup cheese-grated (Sharp Cheddar or Swiss works well)
  • Salt & Pepper to taste
Take spinach dip leftover from a party the night before (or store-bought works fine!) and let sit out at room temperature for 15-20 minutes to soften. (You may also microwave it for 30-45 sec. on low.)

Beat the eggs and add the spinach mixture. Pour into the frozen pie crust to about 1/2 inch from the side.

Top with salt & pepper and grated cheese and bake at 325 for 25-35 minutes until the eggs are set and cheese is golden. Let rest for 5 minutes before cutting.

Enjoy!!


This is SO easy - and a great way to get rid of leftovers. The dip makes the quiche extra smooth and creamy too!

Made it without the crust. This was actually pretty good and I don't really like quiche much... as they say, "Real Men don't eat quiche?". It was good with the leftover sausage cheese balls on the side. Next time I'll add cooked sausage or ham. Wife says it's a keeper... so far, I'm one, too.
