Bacon Biscuit Casserole

(4 servings)

  • 1/2 cup sliced green peppers
  • 1/2 cup chopped onions
  • 1 cup shredded cheddar cheese
  • 2 cups cooked and crumbled bacon
  • 2/3 cup milk
  • 1/8 teaspoon salt
  • pepper - to taste
  • 1 (8 count) package refrigerated buttermilk biscuits
On first taste, this casserole was delicious, rich and loaded with bacon flavor. Unfortunately after a few bites, it becomes apparent that this dish is way too salty... and I even omitted the salt in the recipe. The idea of condensed, compacted bacon with cheese and biscuits probably sounds dreamy to most bacon lovers. Sadly, the bacon is overwhelming and the biscuits just rest on top of the other ingredients without becoming integrated. Bottom Line: This recipe is kind of a dud. For a better bacon casserole, try our recipe called Bacon And Egg Breakfast Casserole. (The recipe on this page was submitted in 2007. It was tested and photographed in March 2016.)

Making a Bacon Biscuit Casserole

This is good for any meal, but we like it best at breakfast. Requires store-bought biscuits and lots of bacon.
