Honey Apple Pancakes

  • 1/2 cup honey
  • 1 cup apple juice
  • 1 apple - cored and mushed
  • 2 cups flour
  • 2 eggs
  • 1/8 teaspoon salt
  • 2 tablespoons canola oil
  • 2 teaspoons baking powder
  • maple syrup or additional honey for topping
Thanks to breakfast lover 'SweetHoney' for submitting this recipe a decade ago in 2003. It took some time but I finally got around to testing it and taking some photos this morning (August 2013). I liked everything about this recipe. You taste both the apple and the honey and those flavors are great together. These pancakes might be a little sweet for some people. I'll probably cut the honey to 1/3 cup next I make it. The only change I made was finely chopping the apple instead of 'mushing' it. This recipe made twelve 4 1/2-inch pancakes.

How To Make Honey Apple Pancakes

In a large bowl, combine all ingredients EXCEPT mushed apple and topping ingredients. When well mixed, add the mushed apple and continue to mix until smooth.

On a griddle or in a large frying pan lightly greased with cooking spray, Dollop quarter-cup sized globs to make the cakes. It's best to start at a medium low heat and increase heat as you see necessary. Flip the pancakes when bubbles begin to appear.

Serve with honey or your favorite syrup.
