Breakfast Casserole

  • 5 or 6 slices bread
  • 1 pound bacon - cooked and crumbled
  • 2 cups Cheddar cheese - shredded
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon mustard powder
  • 1 teaspoon pepper
  • 1 teaspoon parsley - finely chopped
This particular breakfast casserole uses bread as its base so it turns out like a sort of cheesy, savory French toast. This is a great use for bread that's starting to get stale. The funny thing is... the more dry your bread is, the more tender and moist the casserole will be. Dry bread absorbs the egg and milk mixture better. When I make a breakfast casserole of this sort, I usually seek my bread from the day-old section of the grocery store. I enjoyed this dish quite a bit. How To Make A Basic Breakfast Casserole

Preheat oven to 375 degrees.

Place bread face-down on bottom of a 13 x 9 pan and sprinkle the crumbled bacon over the bread. Cover that with a layer with cheese.

Beat the eggs with the milk and seasonings and pour mixture over the ingredients in the baking pan.

Bake 35 for 40 minutes until the egg is completely set.

Cooking Notes From Mr Breakfast:

For my version of this dish, I used 6 1-inch slices of French bread. I ripped one of the slices in pieces to help make an even layer of bread. I used 6 slices of bacon and just 1 cup of cheese. I increased the parsley to 1 Tablespoon and also added 1 Tablespoon of finely chopped chives.

You could replace the bacon in this recipe with the same amount of cooked and crumbled breakfast sausage or diced ham. It's a very basic recipe, so you can create your own variations. Try adding taco seasoning and green chilis for a Southwestern flavor.
