Quick Potato & Egg Skillet

(6 servings)

  • 6 medium potatoes - scrubbed
  • 8 large eggs
  • salt and pepper - to taste
Quarter potatoes and slice into 1/4-inch pieces. Place into skillet with a few Tablespoons of oil. Fry until crisp - stirring occasionally.

Add eggs one at a time - mixing well into the potatoes. Season to taste with salt & pepper seasoned salt works well too). Continue frying until eggs are cooked well.

Cooking Notes: This skillet breakfast can be the basis for many creations. Try adding cooked and crumbled bacon or sausage when you add the egg. You can top it with shredded cheese or gravy. When you fry the potatoes, you can add green peppers and/or onions during the last few minutes of frying to add more flavor. Try adding a little chopped jalapeno to make it spicy. Once you know the basics, you can do anything!


This is a great fast meal at our house. We have it at least once a week with toast or biscuits. It's just potatoes and eggs, but when done right, it's the best.
