Banana Nut Breakfast Bread

(8 servings)

  • 3 medium mashed ripe bananas
  • 1 and 1/4 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup shortening
  • 1/2 cup nuts - finely chopped
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla
Preheat oven to 350 degrees.

In a large bowl, sift together the flour, baking soda and nuts.

In a separate bowl, cream together (I use my fingers) the sugar and shortening. Beat the eggs into this mixture one at a time.

Add sugar mixture to the dry ingredients. Mix in all remaining ingredients.

Bake at 350 for 50 minutes -- watching carefully after 45 minutes. Insert a toothpick into the middle of the loaf. It it comes out free of batter, the bread is done.


Makes 1 loaf of deliciousness! Use any kind of nut you prefer in this bread. I've used walnuts and pecans so far. I'd recommend pecans the most.
