Fluffy Gingerbread Pancakes

(6 servings)

  • 2 and 1/2 cups Bisquick baking mix
  • 3/4 cup apple butter
  • 1 cup milk
  • 2 Tablespoons vegetable oil
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 2 large eggs
Stir all ingredients until blended. Pour batter by a little less than 1/4 cupfuls onto hot griddle.

Cook until edges are dry. Turn, cook until golden brown.

Serve with butter and favorite syrup.

This recipe takes a store-bought baking mix and turns it into delightful pancakes with a flavor of the holidays. Secret ingredient: apple butter.
