Struffelers

(16 servings)

  • 4 cups all-purpose flour
  • 4 large eggs
  • 1/2 cup vanilla extract
  • 1/2 cup sugar
  • 6 cups Crisco shortening
  • 5 cups Karo syrup or honey
In a bowl, combine all of the ingredients. Flour a wooden cutting board, lay mixture on board and kneed until all ingredients are blended and dough looks smooth. Then, cut off 2-inch wide pieces of dough and roll very thin - slicing them about 1/2-inch so they almost look like little pillows. Put shortening in pot and make it hot. Drop pieces in a little at a time to brown. Drain in strainer lined with paper towels.

Next, make a pot with the Karo - let it get hot and mix all dry struffelers into the hot Karo, coating all of them. Put them in a dish and add sprinkles. Repeat until all struffelers are done and put in separate dishes. Make sure the Karo struffelers are cool before covering with plastic wrap.

This dish has been in our family for years and is popular during the holidays. Goes great with a cup of tea or coffee.
