Cereal Waffles

(6 servings)

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 4 Tablespoons melted shortening
  • 1/2 cup chopped raisins
  • 1 cup breakfast cereal*
  • 1 teaspoon salt
  • 1 cup milk
  • 1 egg - well beaten
  • 1 Tablespoon sugar
Sift flour, measure, and sift with sugar, salt, and baking powder. Stir in the cereal and raisins.

In a separate bowl, mix together the egg, shortening and mix.

Combine the dry and liquid ingredients and stir until just mixed and moistened.

Bake in a hot waffle iron according to manufacturer's instructions. Serve with maple syrup and butter.

For the cereal, you can use just about anything you want (without marshmallows). If the cereal pieces are small, like Grape-Nuts or puffed rice, you can just add them to the batter. If they're larger like Cap'n Crunch or large corn flakes, you should crush them up first. Also note that melted butter can be used in place of the shortening.

These waffles incorporate your favorite breakfast cereal and raisins for a whole new taste.
