Cheesy Sausage Egg Mix

(4 servings)

  • 9 large eggs
  • 1 pound sausage
  • 8 ounces Velveeta cheese - diced
  • 1/4 cup milk
  • salt and pepper - to taste
Fry sausage until done. Transfer to stacked paper towels to drain off any excess grease.

In a mixing bowl, beat the eggs with the milk and any seasonings.

Pour egg mixture into a greased frying pan over medium-high heat. Add sausage and cheese. Stir and scramble until egg is fully set and all of the cheese is melted. Serve hot.

Velveeta is a good melting cheese that works really well in scrambles. Be sure to cook your sausage thoroughly so it's browned and no longer pink in the middle.
