Super Breakfast Pizza

(4 servings)

  • 1 12-inch pizza crust - pre-baked
  • 1 and 1/2 ounces pizza sauce
  • 3 large eggs
  • 1 ounce cooking oil
  • 2 or 3 teaspoons red and green bell peppers - small diced
  • 1 T. sauteed leeks
  • 1 teaspoon sun-dried tomatoes
  • 1 Tablespoon fresh diced tomatoes
  • 2 ounces Monterey Jack cheese - shredded
  • 2 ounces Cheddar cheese - shredded
  • 1/2 ounce fresh Parmesan cheese - shredded
  • 1 teaspoon parsley - chopped
Scramble eggs in cooking oil, season with salt and fresh ground black pepper. Reserve. Place pre-baked pizza crust on work surface. Spread a thin layer of pizza sauce evenly on crust. Sprinkle with a small amount of shredded jack and cheddar cheeses. Place scrambled eggs over cheese. Top with diced red and green bell peppers, sundried tomatoes, fresh diced tomatoes and sauteed leeks. Top with additional cheddar and Monterey jack cheeses, as well as the parmesan cheese.

Bake in preheated oven at 425 degrees for 10 minutes or until crust is golden brown. Garnish with chopped parsley, slice and serve.


To prepare sauteed leeks, melt a small amount of butter in a skillet or saute pan. Add sliced leeks and saute until tender. Season with salt and fresh ground black pepper. A variety of sauces can be used in place of pizza sauce in this recipe. Try using barbecue sauce, teriyaki sauce or hoisin sauce and a selection of different toppings.
