Pumpkin Bread

(4 servings)

  • 2 cups white sugar
  • 1/2 cups of brown sugar - packed
  • 4 large eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon. salt
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1 cup vegetable or canola oil
  • 1 cup water
  • 1 cup or more of pumpkin
Beat the eggs; add sugar and oil and mix well. Add pumpkin and water.

Sift together all dry ingredients. Add dry ingredients to the wet ingredients and mix until just combined and moistened. (I sift directly into the bowl with the wet ingredients. Less clean-up.)

If desired, fold in 3/4 cup raisins and/or 3/4 cups chopped nuts (I love walnuts for this recipe). Distribute batter among greased loaf pans (4 medium-sized or 3 large).

Bake at 350 for 1 hour.


This is a simple recipe with very tasty results. Fold your favorite dried fruits or nuts into the batter just before baking to give it your own special touch.
