Banana Nut Loaf

(1 serving)

  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/3 cup shortening
  • 2 large eggs - beaten
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup white sugar
  • 1 cup mashed bananas
  • chopped nuts or raisins (optional)
Sift flour, baking powder, baking soda, & salt. Beat shortening until creamy. Add sugar gradually and keep beating until light and fluffy. Add eggs and beat well. Add flour mixture, alternating with bananas. Mix lightly, but well. Pour into greased loaf pan. Bake at 350 degrees for around 60 minutes. Is done when toothpick comes out clean. Cool. Wrap in foil.


Best when served 24 hour later (the flavors meld together). Chopped nuts and raisins can be added for variety. I find that 2 medium bananas yields about 1 cup of mashed banana.
