Baked Eggs

(6 servings)

  • 12 large eggs
  • 1 (5 ounce) can evaporated milk
  • 1 teaspoon ground dry mustard
  • salt and pepper - to taste
  • 1 cup shredded Cheddar cheese
Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan. Sprinkle cheese evenly in the bottom of the pan.

In a large bowl, beat together eggs, milk, mustard, salt and pepper. Pour egg mixture on top of cheese.

Bake for 40 minutes or until firm. Let cool slightly before cutting into squares to serve.


Great for when you want eggs for a small group but don't want to be standing over the stove top all morning. A simple dish that goes great with toast and bacon or sausage.
