Broccoli And Cheese Frittata

  • 1 pound broccoli - steamed
  • 1/4 cup olive oil
  • 1/2 pound fresh mushrooms - thinly sliced
  • 3 cloves of garlic - minced
  • 3/4 teaspoon ground black pepper
  • 8 large eggs - beaten
  • 1/2 cup Parmesan cheese
Preheat oven to 350 degrees Fahrenheit. Cut broccoli into bite-sized pieces. Saute broccoli, mushrooms and garlic in a nonstick skillet.

Stir, cover and steam for 3 minutes. Add salt and pepper to eggs.

Pour over broccoli. Sprinkle with Parmesan cheese. Bake uncovered for 25-30 minutes, or until set.
