Cream Of Wheat Pancakes

(6 servings)

  • 3 cups pancake mix
  • 3 cups Cream of Wheat
  • 4 cups low-fat milk
  • 6 large eggs
  • 1/4 cup vegetable oil
  • vegetable cooking spray
Spray griddle with cooking spray. In bowl, combine pancake mix and cereal.

Blend milk, egg and vegetable oil; stir into cereal mixture.

Pour a 1/4 cup of batter onto hot griddle for each pancake. Cook until bubbly and then turn and cook until golden brown.

Repeat with remaining batter.


Regular store-bought pancake mix gets a healthy, hearty flavor and texture with the addition of Cream of Wheat hot cereal.
