Tostada Waffles

- For The Waffles:

1 large egg

3/4 cup milk

1/4 cup vegetable oil

1 cup all-purpose flour

2 Tablespoons cornmeal

2 teaspoons baking powder
-
2 teaspoons sugar

1/4 teaspoon salt

For The Topping
-
1 pound ground lean beef
-
1 package dry taco seasoning mix
-
1 cup shredded Cheddar cheese
-
2 cups shredded lettuce
-
1 medium tomato - chopped
-
1/2 cup sour cream
-
sliced ripe olives
For The Cornmeal Waffles:
Preheat waffle maker. Place all ingredients into a blender container. Cover; process at a medium speed until dry ingredients are moistened. Do not over blend. Pour 1/2 cup batter over center of grids. Close waffle maker. Bake until golden - about 2 minutes. This should make 4 waffles.
For The Meat Sauce:
Cook the ground beef with the seasoning mix according the mix's instructions. Place 1/4 cup of finished mixture on each waffle.
Final Toppings:
On each waffle, top meat sauce with 2 Tablespoons cheese, 1/4 cup lettuce and 2 Tablespoons tomato. Garnish with 1 Tablespoon sour cream and olives. Serve immediately.
