Citrus Pecan Waffles

  • 1/2 cup fresh orange juice
  • 1/2 cup milk
  • 2 large eggs - separated
  • 3 Tablespoons butter - melted
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons grated orange peel
  • 1 and 1/2 teaspoons grated lemon peel
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup finely chopped pecans
  • 1 pinch of cream of tartar
  • 3 Tablespoons sugar
Preheat waffle iron.

Blend orange juice, milk, egg yolks, butter, lemon juice and grated citrus peels in large bowl.

In another bowl, combine flour, baking powder, baking soda and salt.

Gently mix dry ingredients into liquid ingredients - just until combined and moistened. Stir in pecans.

Beat egg whites with cream of tartar in another bowl until soft peaks form. Add sugar and beat until stiff but not dry.

Gently fold 1/4 of whites into the batter to lighten, then fold in the remaining whites.

Bake until waffles are golden brown.


These waffles feature orange juice and a little zest from both an orange and a lemon for a big citrus flavor.
