Sher's Cheesy Eggs

(4 servings)

  • 8 large eggs - beaten
  • 1 small block (about 3 ounces) cream cheese - cut into small chunks and softened
  • salt - to taste
  • freshly ground black pepper - to taste
  • butter or oil to saute eggs
Heat butter or oil and scramble eggs as you normally would.

After you make the first stir for the scrambled eggs, add the chunks of cream cheese and finish scrambling. Season to taste.


These eggs are soft and creamy. To reduce fat and cholesterol, substitute reduced-fat cream cheese (Neufchatel) and fold it in during the last few moments of cooking.
