Sausage Burritos

(8 servings)

  • 1/2 pound bulk breakfast sausage
  • 1 package (16 ounce) pepper stir fry
  • 2 cups egg substitute
  • 8 large tortillas - warmed
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup salsa
In large skillet, crumple sausage and cook over medium-high heat 3 to 5 minutes or until done; drain.

Add vegetables to sausage and stir fry 3 to 4 minutes; set aside.

In medium skillet, pour egg substitute; scramble eggs over medium heat.

Add eggs to sausage vegetable mixture.

Divide egg mixture between tortillas; roll and place on platter.

Top with cheese and salsa.

Serve immediately.

This breakfast burrito uses a package of stir fry vegetables to give it extra flavor and color.
