Sri Lankan Omelette

(1 serving)

  • 3 large eggs
  • 1 small onion
  • 1 green or red chilli
  • 1 sprig of curry leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons cornflour
  • 2 Tablespoons cooking oil
Beat the eggs in a large bowl. Chop the onion, chilli and curry leaves.

To the bowl of beaten eggs, add the onion, chilli, curry leaves, salt, pepper and cornflour. Mix well.

Heat the oil in a frying pan over medium-high heat. When hot pour in half the omelette mixture.

Cook for a couple of minutes, carefully turn over and cook the other side. Make another omelette with the remaining mixture.


This omelette gets a unique flavor from the use of curry leaves and red or green chilis.
