Easy Crunchy Stuffed French Toast
Spread 2 slices of the bread with equal amounts of the cream cheese and jam. Use remaining slices to make the covered bread into sandwiches.
- 1/2 cup slightly crushed corn flakes
4 slices of bread (white or cinnamon swirl)
3 or 4 Tablespoons cream cheese
3 or 4 Tablespoons strawberry or raspberry jam
2 large eggs
1/3 cup milk
2 teaspoons sugar
1 Tablespoon butter or margarine - for frying
Melt the butter or margarine in a large skillet over medium-high heat.
Spread crushed cornflakes out on a plate.
In a large bowl, beat together the eggs, milk and sugar.
Place each sandwich into the egg mixture and turn to coat both sides.
Place each side of each sandwich gently into the crushed corn flakes to create a coating.
Fry each side of each sandwich to golden brown - about 3 minutes for the first side and 2 minutes for the other side.
Dust each serving with powdered sugar and serve with softened butter and warm maple syrup.
A quick breakfast treat with a crunchy corn flake coating and a fruity cream cheese filling.
