Fast Huevos Rancheros

  • 2 pounds chorizo (Mexican sausage)
  • 6 large eggs
  • salt
  • pepper
  • salsa
  • shredded cheddar cheese
  • 12 flour tortillas
Brown the chorizo over medium heat. Add eggs and scramble together. Add salt and pepper to taste. Heat tortillas in microwave.

In each tortilla, place egg mixture, a spoonful of salsa and shredded cheese as desired and roll up as a burrito.

Wrap individually in saran wrap to refrigerate, then microwave on your way out the door.
