Quick Huevos Rancheros

  • 2 pounds chorizo (Mexican sausage)
  • 6 large eggs
  • salt - to taste
  • pepper - to taste
  • salsa
  • shredded cheddar cheese (about 1 cup)
  • 12 flour tortillas
Brown chorizo over medium heat, add eggs and scramble together. Add salt and pepper to taste.

Heat tortillas in microwave; in each tortilla, place egg mixture, a spoonful of salsa and shredded cheese as desired and roll up as a burrito.

Let set one minute, so heat from the eggs melts the cheese.

Cooking Note:
This is the simple version. To add even more flavor, consider chopping 1/2 of an onion and 1/2 of a bell pepper and sauteing the vegetables with the frying chorizo.
