		Spray a 1 and 1/2 quart microwave safe casserole dish.  Place potatoes and stewed tomatoes (undrained) in the dish and stir.1 16-ounce package of frozen hash brown potatoes
1 14-ounce can stewed tomatoes
4 ounces Velveeta cheese
 
 Microwave, covered, on high for about 6 to  8 minutes, stirring once during cooking.
 
 Stir in the Velveeta cheese. Continue cooking for another 4 minutes - stirring once.
 
  
 Also known as "Tompatos" or "Potato Tomato Hey Yo's".
