Terri's Fantastic Huevos Rancheros

(2 servings)

  • 4 large eggs
  • 1 tomato - chopped
  • 1/4 white onion - chopped
  • green peppers (optional)
  • oil
  • salt
Chop your vegetables into moderately small pieces. Add oil to your hot frying pan.

Fry your vegetables for about 5 minutes.

Scramble your eggs, and add to the vegetable mixture.

Mix well.

When eggs are cooked, your good to go!

Top with some cheese and serve with beans on the side.

This is my easy recipe for Huevos Rancheros, a great Mexican breakfast. You could also add a chopped jalapeno pepper if you like it spicy.
