Low-Carb Banana Waffles

(2 servings)

  • 1 large peeled banana
  • 1 Tablespoon oil (canola or sunflower)
  • 2 large eggs
  • 6 Tablespoons almond flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons stevia
  • 1/2 teaspoon vanilla. 1 pinch salt
  • 1 pinch cinnamon
Preheat waffle iron.

Process banana, oil, and eggs in blender until creamy. Mix almond flour, baking powder, and any additional flavoring in a small bowl and add to blender. Process until smooth.

Spray waffle iron with cooking spray. Bake on medium-high setting for about 3 minutes.

Serve with berries of your choice, butter, and syrup if desired.

Makes 3 rectangular waffles (1 - 2 portions)


I was surprised how fluffy these came out! Quick and easy. I omitted the stevia and added vanilla powder and cinnamon. Tasty with raspberries or blueberries.
