French Breakfast Puffs

(12 servings)

  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1 and 1/2 cups flour
  • 1/2 cup sugar
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1 large egg - lightly beaten
  • 1/2 cup milk
  • 1/3 cup melted butter (or margarine)
  • 3 additional Tablespoons melted butter (or margarine)
Preheat oven to 350 degrees. (For dark or glass muffin tins, reduce heat to 325 degrees.)

Combine 1/4 cup of sugar and cinnamon for topping. Set aside.

In a bowl, stir together flour, remaining 1/2 cup of sugar, baking powder nutmeg, and salt.

In a separate bowl, combine egg, milk and 1/3 cup of melted butter. Add to dry ingredients, stirring just until moistened.

Lightly grease muffin cups or line with muffin papers. Fill 2/3 full (if you fill too much, the muffins will overflow while baking). Bake in a 350 degree oven for 20 to 25 minutes or until golden. Immediately dip tops into 3 Tablespoons of melted butter, then roll in the sugar-cinnamon mixture you made at the start of the recipe.


These muffins puff up golden brown and are then dipped in butter and rolled in a delicious blend of cinnamon and sugar.
