Stir one can Campbell's Cream of Mushroom Soup until smooth; blend with 8 slightly beaten eggs and a dash of black pepper.
- 1 can Campbell's Cream of Mushroom Soup
8 large eggs - slightly beaten
black pepper - to taste
2 Tablespoons butter or shortening - for frying
shredded cheese - for garnish (optional)
chopped parsley - - for garnish (optional)
Melt 2 Tablespoons shortening (or butter) in a skillet (over medium heat); pour in egg mixture. Cook slowly until eggs set, stirring now and then.
Garnish the top with a sprinkle of shredded cheese or some chopped parsley. Hint: Makes a soupier budget beater for a meatless meal. Try it.
Makes 4 servings.
