Mixed Berry Multigrain Pancake Mix
I can (very) personally vouch for this recipe. When I got married in May 2013, we gave out jars of this mix as wedding favors. I tested a bunch of pancake-in-a-jar recipes and liked this one the best by far. Beyond the recipe below, the only advice I have is... if you're making 100 of these things, ask a few friends to help. Yikes! If you're just making one, it's very fast and the resulting pancakes are terrific.
- 1 pint-size canning jar
1 cup all-purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
4 Tablespoons buttermilk powder
1/8 teaspoon cinnamon
1/4 cup whole wheat flour
1/4 cup brown sugar
1/2 cup dried berry mixture*
2 Tablespoons oats
How To Make Mixed Berry Multigrain Pancake Mix
One jar makes 10 to 12 pancakes.
In one bowl, mix together the flour, baking powder, salt, buttermilk powder and cinnamon.
In a separate bowl, mix together the whole wheat flour and brown sugar.
Creating layers from each mixture, pour the contents from each bowl into your pint jar - placing layers of oats and berries either between or on top of the other layers.
Seal the jar.
* For the berries, almost any combination of dried berries will work. I used dried blueberries, raisins and dried cranberries.

Mixed Berry Multigrain Pancakes
- 1 jar Mixed Berry Pancake Mix
- 1 and 1/4 cups water
- 1 large egg - beaten
- 2 Tablespoons vegetable or canola oil
In a large bowl, mix the water, egg and oil. Add the pancake mix to the wet ingredients and and mix until just combined. Let batter set 5 to 10 minutes.
Heat a skillet or frying pan to medium-high and give it generous coating of cooking spray. Dollop batter in 1/4 cup amounts to make each pancake. Cook until edges are dry and tops are covered with bubbles. Flip and cook the other side to golden brown (about 2 or 3 minutes per side).
Serve with butter and maple syrup. Enjoy!
