Tony Dorsett's Ranch-Style Eggs

  • 1 8-ounce can tomato sauce
  • 2/3 cup chopped tomato (seeds and pulp removed)
  • 1 4-ounce can chopped green chili peppers
  • 3/4 cup finely chopped onion
  • 1 clove garlic - minced
  • 1/2 teaspoon sugar
  • 1/4 teaspoon parsley flakes
  • 1/8 teaspoon sweet basil flakes
  • 2 corn or flour tortilla
  • 2 eggs
  • 1/2 medium avocado - sliced
To prepare the sauce, combine tomato sauce, chopped tomato, green chili pepper, chopped onion, garlic, sugar, parsley and basil. Mix well. Refrigerate sauce until ready to use. Makes 1 cup.

The article confines the sauce recipe to the paragraph above. It should be noted that most Ranchero Sauce recipes have you simmer the ingredients together for at least 5 minutes. Traditionally, the onions and garlic would be sauteed together first for a couple of minutes.

Dip two corn or flour tortillas in a pan of hot oil, turning until crisp. Drain on paper towel. Cook two eggs as you desire. Place each egg on a tortilla. Spoon fresh tomato sauce around eggs. Garnish with avocado slices.
