Cranberry Sauce Pancake Topping

  • 1/2 cup cranberry sauce
  • 2 Tablespoon pure maple syrup
  • 1/4 teaspoon vanilla
  • 1 pinch cinnamon
  • 1 teaspoon orange or lemon zest - optional
Cranberry sauce is great over pancakes, waffles or French toast and it's a great way to use up your holiday leftovers. The fact is that you don't need to add anything to your cranberry sauce. You can just heat it up in the microwave and you're ready to go. However, I find that a few minor additions transform the ordinary into something that tastes new and very appropriate for the breakfast table. For this application, you'll want to use a cranberry sauce with whole or crushed berries, as opposed to the jellied variety that plops out of the can.

How To Make Cranberry Sauce Pancake Topping

In a small sauce pan over medium heat, warm the cranberry sauce. Add the maple syrup, vanilla and cinnamon. Stir to combine.

If your cranberry sauce already has citrus in it, leave out the zest. Otherwise, just add it with the other ingredients and you'll find that a little orange or lemon zest adds a real brightness to the overall flavor.

When the topping is thoroughly warmed and well combined, top your pancakes, waffles or French toast.
