Roasted Banana Oatmeal

(1 serving)

  • 1/2 banana (roasted)
  • 1/2 cup plain Almond Milk
  • 1/2 cup oatmeal
  • cinnamon
  • 2 TBS ground flax seed (optional)
To roast banana, split half of banana down the middle. Place in baking dish, facing up. Spray with extra virgin olive oil. Sprinkle with cinnamon. Bake @350 for 20 min.

Mix oatmeal and almond milk in a microwave safe bowl. Cook in microwave 1:30, stir, cook another 1:00, stir, and cook 30 seconds,stir.

Mash banana into oatmeal. Add flax seed. Sprinkle with more cinnamon. Serve

This is a great filling breakfast. Roasting the bananas brings out the sweet flavor, so you don't miss adding sugar.
