Spinach & Sausage Scramble

(2 servings)

  • 4 large eggs
  • 1/4 to 1/2 cup breakfast sausage - cooked and crumbled
  • 1 cup raw spinach - washed and chopped into thin strips
  • 1/4 to 1/2 teaspoon oregano
  • 1/4 to 1/2 cup shredded Parmesan cheese
  • olive oil or canola oil
  • salt and pepper - to taste
Heat about 1 Tablespoon of oil at medium low to medium heat in a cast iron or non-stick skillet.

Toss in the spinach, oregano and sausage. Cook - stirring - until spinach starts to darken.

While spinach is cooking, beat the eggs in a bowl or blender with a sprinkle of salt and pepper.

Add the eggs to the spinach and stir until mixed and scrambled.

Add the cheese when eggs are nearly done.
