Savory Breakfast Soup

(4 servings)

  • 5 slices thick cut bacon cut into thirds
  • 4 breakfast sausage links also cut into thirds
  • 1/4 cup white or yellow onion
  • 1/4 cup chopped celery
  • 1 teaspoon parsley flakes or 1 Tablespoon fresh
  • salt to taste
  • fresh cracked pepper
  • pinch of thyme
  • 2 Tablespoons flour
  • 2 cups whole milk
  • 3 eggs
  • peeled and chopped potatoes (the frozen kind work well but I like mine a little larger so I cut my own)
Brown bacon pieces and sausage pieces in a large pot until bacon is crisp and sausage is cooked through. Remove bacon and sausage to paper towels to drain.

Saute Onion, celery and all seasonings until onion and celery are softened in bacon drippings.

Add flour and cook one minute to cook out flour taste and make base.

Add milk and just about a half cup water to pan and use whisk until it starts to thicken a bit, cook potatoes for 5 minutes in microwave and then add to pan.

Whisk eggs in microwave safe bowl and cook on high until set, cut into large chunks and add to gravy with bacon and sausages. Stir to combine well and taste for salt, add more if needed.

Serve with biscuits on the side and enjoy.


Soup may be an odd description for this dish. It's actually more of thin gravy enveloping eggs, bacon, sausage and potatoes.
