Throckmorton

(2 servings)

  • 1 medium potato - cooked and diced
  • 2 hard boiled eggs - peeled and diced
  • 1/2 cup diced cooked ham
  • 1/4 cup cooked diced onion
  • 1 cup milk
  • 3 Tablespoons butter or margarine
  • 3 Tablespoons all-purpose flour
  • 1/2 cup shredded cheddar or more to taste
Melt butter in saucepan over medium heat. Add flour and stir until smooth. Add milk and cook, stirring constantly, until thickened and bubbly. Add cheese and stir until melted. Add remaining ingredients and cook and stir until bubbly again.


This can also be made with bacon or sausage instead of ham. Or you could use tater tots instead of diced potatoes. It is called Throckmorton because my husband said that it had to have a name.
