Macaroni and Cheese Eggs

(3 servings)

  • 6 eggs - beaten
  • 2 thick slices Velveeta - cubed
  • 1/4 cup milk
  • onions and other chopped veggies to taste (peppers and mushrooms work great) - if desired
Mix milk and eggs together and cook on medium heat until done. (If you want veggies in it, saute those first then add the eggs over them, cooking all together.)

Add Velveeta cubes and a dash of milk if needed and melt, mixing with eggs.

Cheese should cover eggs completely.

My kids named this, and without the veggies, it is one of their favorite breakfasts.
