Guacamole Omelet

(1 serving)

  • 1/2 ripe avocado - peeled and pitted
  • 1/2 teaspoon fresh lemon juice
  • 1 small tomato - chopped
  • salt and pepper - to taste
  • hot sauce - to taste
  • 2 large eggs
  • 2 teaspoons milk
First, make the guacamole...

In a small bowl, mash the avocado with the lemon juice. Add the tomato and season to taste (2 drops of hot sauce add a nice mild kick). Mix well.

Now, the omelet...

In a medium bowl, beat the eggs with the milk until frothy. Let set for 2 minutes until frothiness subsides.

Pour egg mixture into a non-stick (or greased) frying pan set over medium-high heat. Season eggs lightly with salt and pepper. As the egg begins to set, lift the edges of the omelet with a spatula so uncooked egg flows beneath. When almost completely set, flip the omelet. Turn off heat.

Spread guacamole over one side of the omelet. Fold the omelet to cover the guacamole. Serve immediately.


Eggs and avocado go great together. Serve with salsa. For a cheesy variation, sprinkle 2 Tablespoons of grated Cheddar or Pepper Jack cheese over the omelet - right after you flip and just before adding guacamole. Enjoy!
