Bedeviled Eggs

(12 servings)

  • 12 large eggs
  • 1/2 cup nonfat mayonnaise
  • 4 shakes Tabasco sauce
  • 1/2 teaspoon curry powder
  • 1 teaspoon soy sauce
  • 12 green olives with pimento center (cut in half)
  • paprika
In boiling water, hard boil the eggs. Rinse in cold water, then peel. Cut eggs in half lengthwise.

Remove yolks and place in a bowl or food processor. Add mayonnaise, Tabasco, curry and soy sauce to the egg yolks and mix well (avoid lumps if possible).

Scoop about 1 teaspoon of this mixture into the hollow egg-white center. Garnish with half of a green olive. Sprinkle each one with a dash of paprika.

Store in the refrigerator until ready to eat. To me, they seem to taste even better if they've rested and chilled for an hour.


This was the recipe that was used by Paul Newman in Cool Hand Luke (in the famous hard-boiled egg-eating scene). You're guests will love these.
